Easy recipe for zesty homemade jam

Believe it or not over-ripe fruit can be an ingredient for yummy treats.  Chef Leslie McKenna has a fun and easy way to make jam from old fruit earmarked for the garbage bag.  Here is an easy recipe for making your own strawberry jam.

EASY HOMEMADE STRAWBERRY JAM

INGREDIENTS

2 cups mashed strawberries (about 1 qt.)

1 Tbsp. lemon juice

1 pkg. Sure Jell fruit pectin

4 cups sugar

3/4 cup water

METHOD

Stir strawberries, lemon juice and sugar together, mixing thoroughly; set aside.

Stir Sure Jell and water in saucepan. Bring to a boil, stirring constantly. Boil 1 minute. Stir in mixture together until sugar is completely dissolved and no longer grainy.

Pour into containers; cover. Let stand overnight. Store in freezer until opened. Then store in refrigerator.

Important: Measure sugar exactly.

Makes 4 (8 oz.) jars
