Mock Mashed Potatoes

Boil one head of cauliflower (chopped, leaves removed) until soft in a pot of water
Drain and then mash with 1 clove garlic, peeled and minced


Add:
2 Tablespoons cream cheese
2 Tablespoons sour cream
1/8 tsp salt and pepper to taste

BONUS: Cauliflower is high in immune-boosting Vitamin C and a good source of added fiber!
