Open-Faced Avocado Goat Cheese Sandwiches

Serves 6

4 ripe Hass avocados, halved, seeded, and peeled
4 ounces mild, soft goat cheese
Juice of 1 lemon
4 dashes Tabasco
1/8 teaspoon freshly ground black pepper
Salt, to taste
2 tomatoes, thinly sliced
2 pickling cucumbers, thinly sliced
6 mini French baguettes, sliced in half lengthwise and lightly toasted
Cracked Black Pepper Garnish (see recipe below)

Pre-heat broiler.

Combine avocados with goat cheese, lemon juice, Tabasco, and pepper in a large bowl.  Mash with a fork until mixture is slightly lumpy, not a smooth puree.  Taste and season sparingly with salt since goat cheese can be salty.

Spread toasted baguette halves with avocado goat cheese mixture.  Place under the broiler until warmed, about 1 to 2 minutes.  Remove from oven and top 6 of the baguettes halves with tomato slices and the other 6 halves with cucumber slices.  Finish each open-faced sandwich with a drizzle of Cracked Black Pepper Garnish down the middle and serve immediately.

Cracked Black Pepper Garnish

Makes 1/2 cup

2 tablespoons cracked black pepper
1/2 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoon salt

Stir all of the ingredients together in a small bowl.  Spoon over vegetables or drizzle lightly over dressed salads as a garnish.
