Recipe: Zucchini Cakes

Zucchini Cakes

Yield:  1 quart

3 zucchinis

1.5 C caramelized diced onions

4T garlic

2t salt

1t  black pepper

4oz crumbled feta (1 C)

3/4 C whole dill leaf

3/4 C chopped parsley

1 C panko

2 cups grated potato

Grate zucchini, sprinkle with salt, let sit 10 minutes to release liquid.  Squeeze out  as much moisture as possible, then sauté in evo with garlic, onions, and pepper.  Allow to cool, then mix in crumbled feta, chopped parsley and dill, potato and panko.  Check salt.
